Midrand's halfway-to-everywhere Christmas cake
Midrand does December big — estate gates dressed with lights from Blue Valley to Carlswald, office parks running year-end functions, families halfway between Joburg and Pretoria hosting both sides. The cake needs to match the moment: a dark, moist ±2.1kg home-made brandy fruit-cake, jewelled with glacé cherries and walnuts.
Baked in Fourways in one limited annual batch: boiled fruit, hand-folded batter, slow bake, brandy finish, 2–4 weeks maturing. It keeps for weeks wrapped, travels beautifully to Midrand estates, and the Gift Box version is our most-ordered corporate gift north of the Jukskei.
What's inside the cake
Dried fruit, glacé cherries, walnuts, butter, eggs, flour, sugar, brandy, sherry, cinnamon and mixed spice. Boiled-fruit method for extra moistness, baked low and slow with brandy, finished with brandy over the top, then wrapped and matured 2–4 weeks. One recipe, one generous ±2.1kg size (22–23cm) — serves 20+ thin slices. Contains gluten, egg, dairy, nuts and alcohol.
